Southern Bean Dip
Gleaned from the “Taste of Home” forum at Reiman Publications.
1 onion, chopped
1 green pepper, chopped
1 small jar (2 oz.) pimientos
1 can shoe peg corn, white, drained
1 can black-eyed peas, drained, rinsed
1 can black beans, drained, rinsed
salt and pepper to taste
1/2 cup vegetable oil
1/2 cup sugar
3 Tbsp Original Tiger Sauce (find in hot sauce section)
Mix together the oil, sugar, and Tiger Sauce and pour over the other ingredients. Serve with Tostito “Scoops”.
Notes: I think this is even better the day after you make it. It keeps quite a while — luckily, as it makes a lot! This is more like a salad than a dip, so I use it for either.
